The basic shape of running shoes is determined by the "last".  The last is the 3D wooden or plastic model on which the running shoes sole is cut.  Lasts can be based on a pattern that is curved, semi-curved, or straight.  Some makers of running shoes will even market to a specific group of runners.  For example, Saucony has a line of women's running shoes.  Saucony actually makes womens running shoes with a more narrow heel and wider toe box to better fit the narrow heel of a woman.

Some runners have discovered one particular brand of running shoes they like better than another.  Maybe Nike trainers fit you best.  If so, it could be because the shape of Nike's last conforms to the shape of your foot -- so you always buy Nike trainers because the fit is so natural for your foot.  Maybe those are the best running shoes for YOU.

More running tips -- One way to examine the shape of your foot is to remove your running shoes and stand on a piece of paper.  Next, draw the outline of each foot.  Draw a straight line bisecting your heel.  Then extend the line from your heel to your toes.  Remember, no jogging shoes - bare feet.  If the line goes through your first two toes, then your foot is mostly straight.  The more the line moves away from your big toe, the more curved your foot is.

Final running tip.  Take your running shoes and compare them to the tracing of your foot.  Now you can see how well the shape matches.  If it's a poor fit, maybe it's time to order some new running shoes.
